Ground Beef and Zucchini Casserole
Ingredients:
– 1 pound ground beef
– 1 large zucchini, diced
– 1 medium onion, chopped
– 2 cloves garlic, minced
– 1 cup shredded cheddar cheese
– 1 cup tomato sauce
– 1 teaspoon dried oregano
– 1 teaspoon dried basil
– Salt and pepper to taste
Instructions:
1. Preheat the oven to 375°F (190°C). Grease a casserole dish.
2. In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
3. Add the chopped onion and minced garlic to the skillet with the ground beef. Cook for about 5 minutes, until the onion is translucent and fragrant.
4. Stir in the diced zucchini and cook for an additional 2-3 minutes, until slightly softened.
5. Add the tomato sauce, dried oregano, dried basil, salt, and pepper to the skillet. Stir well to combine all the ingredients. Simmer for 5 minutes to allow the flavors to meld together.
6. Transfer the ground beef mixture to the greased casserole dish. Spread it evenly.
7. Sprinkle the shredded cheddar cheese over the top of the ground beef mixture, covering it completely.
8. Place the casserole dish in the preheated oven and bake for 25-30 minutes, or until the cheese is melted and bubbly.
9. Remove the casserole from the oven and let it cool for a few minutes before serving.
