Green Chili Chicken Enchilada Casserole
Introduction

Ingredients:
– 2 cups cooked chicken, shredded
– 1 can (4 oz) diced green chilies
– 1 can (10 oz) green enchilada sauce
– 1 cup sour cream
– 1 cup shredded Monterey Jack cheese

– 8-10 corn tortillas
– 1 small onion, diced
– 2 cloves garlic, minced
– 1 tablespoon olive oil
– 1 teaspoon ground cumin
– 1 teaspoon chili powder
– Salt and pepper to taste
Instructions:
1. Preheat your oven to 350°F (175°C).
2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic and sauté until they become translucent.
3. Add the shredded chicken, green chilies, cumin, chili powder, salt, and pepper to the skillet. Stir well to combine and let it cook for about 5 minutes to allow the flavors to meld together.
4. Pour the green enchilada sauce into the skillet and stir until everything is evenly coated. Simmer for an additional 5 minutes.
5. Remove the skillet from heat and stir in the sour cream until well incorporated. Set aside.
6. In a greased 9×13-inch baking dish, spread a thin layer of the chicken mixture on the bottom.
7. Layer half of the corn tortillas on top of the chicken mixture, followed by another layer of the remaining chicken mixture. Sprinkle half of the Monterey Jack and cheddar cheese on top.
8. Add another layer of corn tortillas and finish with the remaining chicken mixture. Top it off with the remaining cheese.
9. Cover the baking dish with aluminum foil and bake for 25 minutes. After 25 minutes, remove the foil and bake for an additional 10 minutes until the cheese is melted and bubbly.
10. Once done, remove from the oven and let it cool for a few minutes before serving.
