Loaded Chicken and Potato Casserole
Ingredients:
– 4 boneless, skinless chicken breasts
– 4 large potatoes, peeled and thinly sliced
– 1 cup shredded cheddar cheese
– 1/2 cup bacon bits
– 1/4 cup green onions, chopped
– 1 cup sour cream
– 1/2 cup mayonnaise
– 1 teaspoon garlic powder
– 1 teaspoon onion powder
– 1 teaspoon paprika
– Salt and pepper to taste
Instructions:
1. Preheat the oven to 375°F (190°C).
2. In a large bowl, mix together sour cream, mayonnaise, garlic powder, onion powder, paprika, salt, and pepper until well combined.
3. Place the thinly sliced potatoes at the bottom of a greased baking dish.
4. Spread half of the sour cream mixture over the potatoes.
5. Lay the chicken breasts on top of the sour cream mixture.
6. Spread the remaining sour cream mixture over the chicken breasts.
7. Sprinkle shredded cheddar cheese evenly over the casserole.
8. Top with bacon bits and chopped green onions.
9. Cover the baking dish with foil and bake for 45 minutes.
10. Remove the foil and bake for an additional 15 minutes or until the chicken is cooked through and the cheese is melted and bubbly.
11. Serve hot and enjoy!
